This granola is the perfect thing to squirrel away and nibble on in between breakfasts.
Maple Olive Oil Granola
(adapted from Martha Stewart)
1 1/2 c. rolled oats or multigrain hot cereal
1/2 c. unsweetened coconut
1/2 c. pecans and/or walnuts (I don’t measure and probably add more)
1/4 c. maple syrup
2 TB dark brown sugar
1/4 c. olive oil
2 TB sesame seeds
1/2 t. coarse salt
1/2 c. raisins
Preheat oven to 300ºF, line a baking pan with parchment paper. Mix everything except the raisins together in a bowl. Spread out on pan. Bake for 30 minutes, stirring mixture every 10 minutes. Mix in the raisins and bake for another 10 minutes.
