a couple handfuls of tortilla chips
1 c. black beans
2 c. spinach or baby spinach
2 or 3 eggs, lightly beaten
1/2-3/4 c. ranchero sauce
queso cotija (or feta)
Toast tortilla chips in the oven (about 3-4 mins at 350ºF). Set aside. Lightly sauté black beans and spinach. Set aside. Scramble eggs until almost set, mix in chips, beans, and spinach. Divide between two plates. Top with cheese and avocado.
