I got the idea for this blueberry Dutch baby from an episode of Fringe. It began with Walter making blueberry pancakes for the most important meal of the day (he proved it in 1973).
I used my favorite recipe and put 1/2 c. of frozen wild blueberries on top. It’s a good use of the frozen fruit — the extra moisture creates more steam, which makes for an even puffier pancake, and the baking time/temperature intensify the blueberry flavor.
But the best part was that when it was in the oven, it looked like something you would see on the show.
