I’ve been sneaking bags of this granola into my ladyfriends’ purses at holiday parties.
Dark Chocolate Granola
(adapted from this recipe)
Makes about 4 cups.
1 1/2 c. rolled oats
1/2 c. unsweetened shredded coconut
1/4 c. sliced almonds
1/4 c. pecans or hazelnuts
1/4 to 1/2 c. dark brown sugar (muscovado if you have it)
1/4 c. olive oil
1/2 tsp. coarse salt
1/2 to 3/4 a bar of dark chocolate, finely chopped
Preheat oven to 300ºF and line a baking sheet with parchment paper. In a large bowl, mix together everything except the chocolate. Spread out on pan.
Bake for 30-40 minutes, stirring every 10 minutes, until the oats and nuts are toasted to your liking (I don’t like overtoasted nuts). Cool. When granola is barely warm to the touch, stir in the chocolate.
