Medjool dates are my favorite kind of date, but I also like going to see a band with le bf. I made these (sweet) date bars for breakfast the morning after the (supersweet) Jenny & Johnny show at the Troubadour.
Classic Date Bars (adapted from Epicurious) Makes about 16 squares.
1.5 c. water 1.5 c. dates, pitted + chopped 1 tsp. vanilla extract a squeeze of lemon juice
Bring water to a boil. Add dates + squeeze of lemon and simmer until thick and glossy, about 10 minutes. Cool, then stir in the vanilla. Make the crust in the meantime:
1.5 c. flour, all-purpose or spelt 1 c. rolled oats 3/4 c. dark brown sugar 1.5 tsp. cinnamon 1/2 tsp. baking soda 1/2 tsp. salt 3/4 c. butter, cold + cubed
Preheat oven to 350ºF and line an 8” x 8” pan with parchment paper. Mix dry ingredients together in a bowl. Rub in the butter until moist clumps form. Sprinkle half of the mixture into the pan, pressing down lightly. Spread the dates on top, then the rest of the crust. Bake until golden brown and set in the center, about 30-40 mins. Cool in pan, then cut into squares.
